Nerds Gotta Eat: Aquaman’s Spicy Coconut Salmon

IMG_0479So okay, maybe Aquaman wouldn’t be eating his friends of the deep. Or maybe he just respects them enough to make them into super delicious and easy meals. It’s hard to tell. Either way, this dish is inspired by you, Aquaman. It’s said that Atlantis would be located somewhere in the Caribbean, so I whipped up a meal loosely inspired by a loosely real place for our dear underwater superhero.

Now, if you don’t like fish, chicken can easily be substituted here. You’re just not paying much homage to Aquaman, but that is entirely okay. You’ll just need a few ingredients to make this dish, though there are a heck of a lot more ingredients pictured in this image below. I had planned on showing you how to make a rice side dish, but my phone died and couldn’t get any pictures of it. So, we’ll save that for another time.

To make the salmon, you’ll need:

2 salmon portions
1/2 cup coconut milk
1 tablespoon sriracha
1 teaspoon cilantro
1/2 teaspoon thyme
1/4 cup panko bread crumbs
Salt & pepper

First, preheat your oven to 400 degrees. Then, start on the sauce that you will coat & bake the salmon in. To the coconut milk, add the sriracha and combine. Finely chop the 1 teaspoon of cilantro and add that to the liquid, along with the 1/2 teaspoon of thyme. Add salt & pepper to taste. You can also add in more sriracha if desired. photo 2 (12)In a baking dish, either coated with non-stick spray or lined with foil, place your two salmon portions. Then, pour the coconut sauce over directly over them. Half over one, and half on the other. You want to get as much of the sauce on the fish as possible, rather than just surrounding them with it. With the back of a spoon, spread out the sauce over the fish and smooth out the chunky bits that will be in the coconut milk. Once the salmon is nicely coated in the sauce, add the panko bread crumbs to the tops of the portions. Pro tip: I found it was delicious to also add a little bit of shredded coconut on top along with the bread crumbs. If you have some on hand, absolutely go there. photo 3 (11)When the salmon is set and the oven is heated, pop those bad boys in there for about 3o minutes. Once they’re almost completely done, switch your oven over to broil for about 5-10 minutes. This will allow the bread crumbs & tops of the salmon to get nice and crispy and maximize the deliciousness. Then, release those beauties from the oven.

IMG_0477Plate up these lovelies with some of the rice that I can’t show you how to make, and you’re set for a tasty, tasty dinner date with the King of the Seven Seas. Though, if you’ve got a date with Aquaman, I would make something other than fish. If you made this, he’d probably talking to the salmon all night and not you.
